I've taken a lot of pictures this month with my new camera. I don't really
know what I'm doing. I should probably get out the manual
and start reading. Instead, I just take tons of pictures and delete most
of them. Thank heavens for digital cameras. I took this on a very cold morning, when I went to feed the chickens.
I liked the ice crystals on the coop door and the cool reflection of the
trees. Here's a few more, so I don't forget what a snowy January we had.

Goal #26 - Improve my photography skills
This is what my dining room table looks like most of the time. I haven't
been serving many meals in this room, but there has been plenty of
feeding the spirit.
I've been digging into the New Testament and it's just too much work to
pull all these reference books out each day and then put everything away.
This is my favorite commentary, which was a Christmas gift from
my husband. It's amazing. I have a hard time pulling away from
it each morning.

This is a beautiful pot of kale that I'm blanching for a veggie lasagne -
which was delicious, by the way.....
Cooking meatless meals isn't hard and they are delicious. I am aiming
for three dinner meals a week. Less meat is better for us. The problem
is, I am a creature of habit and I tend to cook the same things over and
over. I am not in the habit of cooking meatless- so I have to put more
effort into thinking through my meal plans.
The meatless meals we enjoyed in January were:
* Tuscan Bean Soup
* Baked Ziti with Gorgonzola and Spinach
* Bean Burritoes
* Greek Spaghetti
* Pinto Beans and Rice
* Pesto Pizza with Feta Cheese and Sundried Tomatoes
* Butternut Squash Soup
* Veggie Lasagna with Kale and Goat Cheese
Yes. I do have a passion for pasta!!
