a steady supply. Fresh peaches are so good! A little later in the month
my favorite variety will be ripening and I will head to the orchard to
pick my own. With my car loaded with delicious fruit, its back home
to freeze, can and eat to my hearts content.
The new Everyday Food magazine has a recipe for a nectarine smoothie
that I've tweaked a bit and have been enjoying almost daily. It's super
easy and healthy and oh, so peachy.
Take two or three ripe peaches and slice into a blender.
Add 1/2 cup almond milk. If you haven't tried almond milk, you may be
pleasantly surprised. I prefer it over soy, which I think has a funny aftertaste.
It seems like more and more people can't drink milk these days and it's a
good replacement for dairy. I have one such person in my house and even
though I can drink milk ( and love it), I use almond milk in lots of ways,
just because I think it tastes good. After trying several brands, we decided
we like Almond Breeze the best. I've also heard the chocolate variety is
really good, but so far I've stayed away from that. Surprising, huh?
Add 1/2 cup plain yogurt or 1/3 cup greek yogurt. I know it would be
really good with greek yogurt, but so far I've just used regular yogurt
because that's what I've had.
Add a couple of handfuls of ice cubes
and then blend away.
I have to tell you how much I love my blender. This beauty was my
birthday present to myself a few years ago. After burning up several
less expensive blenders, I decided to go ahead and invest in a good one.
And this Vita-Mix is a good one. I'm not kidding, this baby will blend
anything. I've never seen such a powerful blender. I recognize that getting
this excited about a kitchen appliance is a little strange, but I'm just like that.
I could do an entire post on my favorite kitchen tools . Hmmm... maybe
I will.
After blending all the ingredients, I add sweetener to taste. I use
stevia. Honey or sugar would work too.
A little more blending and it's ready.
Isn't it a pretty "peach" color?
Drink slowly...because this definitely has the potential to give you an
ice cream headache.

Kitchen tools are my weakness. I seem to have a habit of collecting them but not necessarily using them! Love the blender!

ReplyDeleteI have a smoothie addiction and will be trying this one. My favorite non-dairy is So Delicious Coconut Milk, but second fav is almond breeze. I use splurged on a vitamix last year also - soo worth it!
